I have been eating smoked salmon and smoked sea trout from JWF since I found his premises 5 or so years ago. I am now officially addicted to his smoked fish. I buy whole sides of the sea trout (my favourite tipple) and slowly work through a side in three weeks. Not alone, I am only slightly greedy, with my wife and sundry lucky guests. The advantage of three weeks is having the flavour and texture change from an incredibly 'light cure &smoke' with a near sushi texture, to a firmer feel and cure. He is a genius with sea trout/salmon a cure and a smoker. By the way he can cook, his supper clubs were wonderful but like many fun things fell foul of covid. I am hoping for a return on that front.
We count ourselves extremely fortunate to have James's Deli just around the corner. However if it wasn’t, ’ I would without a doubt still be a regular customer. His home smoked salmon is by far the very best I’ve had. He has frequent deliveries of fresh salmon directly from Scotland and takes pride in sourcing his ingredients and other products that he sells. He runs a great “supper club”. Supplying everything needed for an exceptional supper with clear simple instructions for cooking, with minimal effort. A real treat at the weekend. James BTW, has worked in Michelin’s star kitchens, he is very approachable, happy to advise and is in normal times, available for outside catering & events.
