The concept of reinventing the traditional Filipino dishes is considered quite risky, in the gastronomic community, as most Filipinos would require the sense of euphoria and nostalgia in every bite.
As a Filipina, I was more than pleased to say that the food brought me not memories, but the future. The traditional taste was exquisitely preserved, but the presentation, serving and arrangement were very innovative and contemporary.
The mackerel was sublimely seasoned, as one can taste the freshness in every strand of the fish. The pork barbecue was cooked to perfection, sweet, tender and succulent, it was the quintessential contrast to the pickled papaya. Lastly, the dessert, Turon, was indeed the cherry on top of an amazing repertoire of dishes served by the restaurant.
Overall, the dining experience was astounding. The front of the house was spot on, complementing the timing of the kitchen. I would definitely recommend it!
On arrival we were greeted with a big smile and welcome, this was the signature of the evening. The staff were always there to advise on the various dishes, which was great as none of us are Filipino. Our party had decided to eat as many different dishes as we could from the menu and we were very very pleased. The standout dishes were the chicken adobo, I think its called, and a vegetarian dish which was out of this world i.e. outstanding. Desert was so tasty we all wanted seconds.
In a nutshell, the atmosphere, food, and staff all made for a super night. We will visit again.
