I went for a trek out to the Brockley market on a Saturday specifically to try this burger, some say it's London's best, and after sampling around 20 or so burgers in the London area over the last year  I had to definitely add this to the list.

I ordered the cheeseburger with fries, took a while to get as they had plenty of orders to get through before mine, but it was a pleasant day and roaming around the other stalls to see their fare was interesting.

When my order was up, I quickly realised there's nowhere to actually sit and eat this thing, after finding a suitable wall to lean against I got stuck in.  Maybe my expectation was set really high from the reviews I've read (not just on here) but the first thing I felt after my initial bite was a distinct feeling of being underwhelmed.

Let's be clear... nothing was technically wrong with the burger, it was made very well and the ingredients seems fresh but unlike a few other burgers I've had I wasn't wow'd by anything, the meat was clean and fresh, bun was nice and had sesame seeds, the salad was crunchy and not wilted, although the tomato could have been firmer, and the cheese was so well melted on top of the patty, and while it was a nice burger I hadn't been blown away like I was hoping for.

Fries were very nice as well, one of the few times I polished them all off.

24 hours to celebrate all that is meaty, cheesey, salty and delicious. And do you know what's even better than having a day dedicated to patties and buns? Having Mr Hyde put on a big ol' burger party in Dalton Yard so I can stuff my face with the best London has to offer - yeah it is!. Now we know I love burgers. I'm sure it's come across before. I reallyyyy like to talk about them. But so do mega burger babes Flick and Sophie . SO we rallied together at Dalton Yard to become the ultimate task-force with one simple mission: eat. them. burgers.

Suffice to say, the London burger game is strong both in brick and mortar institutions and more-so on the streets but even so, Mother Flipper still holds strong among the best.

Flipping burgers is an art form which should not be taken lightly and Mother Flipper certainly understand this placing care every step of the way from sourcing the best ingredients to compiling a burger they can be proud of.

The creme de la creme however is the double candied bacon flipper as the sweet swine addition takes the traditional cheeseburger to another level.

Once exclusive only to Brockley Market (which they still call home), Mother Flipper can now be found across London, most notably trading with Kerb.

Potentially my most favourite burger in London. The candy bacon special is made from coarse mince patties, loaded with squirt of magical MF special sauce and American cheese. Topped with pickles, home-candied brown sugar bacon, shoestring fries to give a perfect crunch and gently squashed in a toasted brioche bun.

I could give you a list of excuses as long as my arm as to why it's taken me so long to visit Mother Flipper to give you the low-down on their burgers...

...but I doubt you care.

The simple fact is I have now eaten Mother Flipper burgers, and I get to give you my perspective on them. Tally ho!

Price:

Presentation:
Upon opening the anonymous, white label burger boxes, you're presented with a lightly sweating bun encasing a rough-edged burger, oozing with juice and sauce. As with other burger offerings such as from Patty & Bun and Burger Bear, opening your burger packaging . It *almost* brought a tear to my eye. 

Toppings: 
The Mother Flipper cheeseburger is deceptively simple. Topped with american cheese (which is cloched on the grill to weld it to the patty and the bun), the burger sits on an onion/lettuce 'slaw melded with ketchup and mustard. A solitary, thick, crinkle cut pickle sits at the heart of the salad, and gives an instant hit of nostalgia - classic American cheeseburger style. 

The Dirty Barbie is, as you'd expect, covered with a pile of dirty toppings. BBQ-braised onions are sweet and sticky - being pre-cooked and then applied before being steamed with the bun means they've had time to assimilate some serious flavour. Candied bacon mixes with the BBQ onions and the double hit of sweet and salt combines - if anything, it's the cheese that's the casualty, being dominated by the other two toppings. 

Below the patties, ketchup and mustard combine to add a sharp riff to the mellow BBQ notes, and this balances what could otherwise be a very rich burger.

Beef: 
The beef used in the Mother flipper burgers is 28-day aged chuck from Scottish Black Angus, mixed to a proprietary recipe by a West London butcher (they chuck in some rib cap to add juiciness). It's added to the chrome grill as a ball, and left to form a crust for a couple of minutes (meaning the juices run UP through the burger, rather than out onto the grill), before being smashed down to form patties. Watching the grill boss set to his work was poetry in motion. Smashing is not a new technique, but it is technical - you have to apply even pressure across the burger patty in order to ensure the maximum surface area touches the grill whilst ensuring even cooking throughout - so the Mother Flipper grill boss uses a double handed smash technique to achieve this. 

Once smashed, the beef is liberally sprinkled with salt and pepper, and the patties are left until a thick, caramelised crust is formed and the juices start bubbling through to the top of the burger. They are then forcefully scraped off the chrome and flipped, to be topped with cheese, bacon, onions etc.

All the technique shows in the delivery of the burgers - the beef is medium pink in the middle, well seasoned, and with a brilliant savoury/umami crust. Both the single-pattied cheeseburger, and the double-pattied Dirty Barbie are consistently cooked and seasonsed.

Bun:
Glorious sesame glazed demi-brioche (and completely egg free). The Mother Flipper buns are lightly toasted on a dedicated bread toasting machine (that's serious business as space behind the Mother Flipper stall is at a premium). The bottom buns are dressed ready for the burgers to be added, but the top buns are placed on the patty, on the grill, and steamed under cloche to both soften them, and ensure the toppings/cheese are welded together. This adds a much needed element of structure to these juicy beasts. 

Overall rating: 9.5/10
These are very, very good burgers, as many of you have been telling me for quite a long time. The burgers have to walk a fine line between the loaded, juicy toppings and beef, but still delivering an edible street food experience - without it ending up all over your lap and shirt. And they do this brilliantly. 

The Dirty Barbie, for me, packs a similar punch to MeatMarket's black palace burger albeit with BBQ overtones, but still delivering a massive savoury, beefy hit, and for £6, the Mother Flipper cheeseburger has to be one of the best value burgers in London - alongside my long-time favourite Lucky Chip.

I am thankful that the planets have aligned and it has become a part of my life, and now part of this blog.

If you want to sample the delights of Mother Flipper you have to get here early, so if you find yourself here before 11, then this is prime time to secure yourself a spot in the queue!
Since it's breakfast, we opt for a breakfast muffin of £5 each with another £1 worth of candied bacon! It's freshly made in front of us, requiring a 5 minute wait but once it arrives, oh it's worth it!
The bacon is sweet with a bit of crunch, the sausage patty rich and with a lot of flavour.  The only down side (And this is where they lose a 0.5 mark) is the American cheese slice which is cloying and doesn't add anything to the flavour!  But all in all, it's great and the next time I'll be trying a bacon cheeseburger.

I wanted to see what all the fuss was about, so I went in search of Mother Flipper and I was not disappointed. The first bit was an OMG moment and now I see what all fuss was ????! It was the best burger I had in a long time, I can't wait to try the candied bacon on my next burger ????. Just find it and go ????........

I have never dragged myself out of bed early enough to grab a Breakfast Muffin from Mother Flipper, having sold out the last few times I have tried.

This time I was in luck and went all the way with the optional Rosti and Candied Bacon. My first bite was so delicious I instantly scurried away to avoid having to share more than a mouthful with my girlfriend. The sausage was perfect and the sweetness of the candied bacon, which Mother Flipper is well known, works extremely well. She found me with egg dripping down my chin and hands, I found it very hard to not go back for seconds.

I will from now on be arising as early as possible on my precious Sunday mornings to trot to Wapping Market for what is my newest favorite breakfast.

I had a lovely take away, (Chips & Veggie Flipper) I was very pleased to know, that the chips are cooked separately! Being a fussy vegetarian, I was very grateful. I will definitely be returning again. Thank you!

This mother flippin burger is insanely good. I have had it with those mother flippin burger joints popping out everywhere, burger this and burger that. But this stand, this mother flippin stand opened during a family-friendly local market is just mad good.

Quality burger! I made the journey down to the Brockley St Market on a wet Saturday arvo and was glad I did! I went for one thing - Mother Flipper. I ordered the Candy Bacon Flipper and after a 5-10 minute wait I was tucking into a delicious burger. The maple soaked bacon added a nice sweetness, the patty was sizeable and the bun spot on. The salad was ok, but the tomato wasn’t needed on this burger. Fries were £2.50 and were a decent serving. Will definitely be back.

I was happy to see a Mother Flipper pop up at Kew Gardens. It's one of the burger joints I've been waiting to tick off of my list. I was really impressed by the classic cheese burger. The patty and bun were solid - not too greasy and cooked really well. It was just the right size too- I'm definitely not a fan of these gargantuan burgers out there. For me though, the toppings were some of the best I've had. They add great flavour and texture to the burger and bring the whole thing together. Again, overfilled. Just the right amount for the size of the burger. A final note - the service time was very quick. Definitely a top 5 burger in London for me.

Had a cheeseburger at Kew Gardens last night. I am coeliac and I was SO impressed by the precautions they took to avoid cross contamination. And to top it all the burger was delicious, with crisp salad, lovely bun and very crisp fries. well done guys!

I have eaten a lot of burgers across London, but Motherflipper is my favourite. From the sausage muffins which I say are the tastiest breakfast muffins I have ever eaten. Their burgers are just delicious, just juicy and the dirty Barbie is a real man size, their prices are very fair for the high quality of the burgers. This is well worth once a week visit, I have been a regular for years and worth the trek down to Brockley market. Enjoy guys, I sure do.

Mother Flipper. This burger joint came as a recommendation from the experts in London. A few hour affair that pops up at the Brockley Market on Saturdays. The preparation at Mother Flipper is done right in front of you. I waited in line and my mouth watered at the expertly constructed burgers. A three-man crew consisting of a full-time assembler, full time flipper, and a bun toaster cranks out these tasty delights. I got the Candied Bacon Burger which consists of a tender sesame bun, candied bacon, juicy beef, shredded lettuce, pickles, ketchup, mustard, and thinly sliced red onion. Each of the ingredients on the Candied Bacon Burger are well thought out for flavor. A sweet and crispy bacon, tender and juicy beef, vinegary and tangy ketchup + mustard + pickles, melted cheese, and a toasted but soft bun to soak it all up. My burger disappeared before I had a chance to write too many notes about it. That is a good sign when it comes time to dish out a score. The Candied bacon Burger is something to be admired for its well distributed and thought out flavors. A smart decision not to use a tomato really helps the texture, and makes this burger very focused on key flavors. Every ingredient contributes, but none overwhelm. Compared to the other top burgers my mouth felt a little dry, but this might be because I did not have a drink at my disposal while enjoying it. This is one of the best burgers in London and there is no doubt about it. A shame that it is not easier to get these burgers more than one day a week.

I absolutely love love love these burgers - I can 100000% say, these are the best burgers I've ever had ever since I first tried them at a work event. The Dirty Barbie burger is definitely my favourite, and I go every year to Model Market to get one of these bad boys! Yes they are pricey, but totally worth it!

Apart from their blink-and-you'll-miss-it weekly appearances at Brockley Market, Mother Flipper can also be booked to cater private events. We were lucky enough that during Stylist's 24-Hour Challenge, they got the guys from Mother Flipper down to dish out free slider portions of their burgers for fans of the magazine who came down at 1 in the morning. Four of their burgers were available - The Mother Flipper Cheese Burger, The Double Candy Bacon Flipper, The Dirty Barbie and The Bacon Swiss - and I got to try one of each. The smell of sizzling patties does amazing things for whetting your appetite, and it was absolute torture waiting while they cooked the burgers for the Stylist team first before getting on to the orders of everyone else in line. By the time they called out my order number for the first burger I was starving. Thankfully, the three-man team running the operation worked in sync, vastly reducing the waiting time. The meaty and flavourful 100% chuck steak patties are cooked to medium perfection, which means it can get a bit messy when the juices invariably start dribbling down your chin. All the burgers came with delightfully crisp vegetable with nary a wilted lettuce in sight, though my favourite topping might well be the Candy Bacon, which features in a number of their burgers. It's bacon fried in maple syrup - there is absolutely nothing not to love about it. The only minor quibble I had was with the slightly cold buns - they'd seen a round of toasting on the grill, but in the process of assembly had been chilled to nearly ambient temperature. Still, with the patties piping hot and oozing, the overall burgers still worked incredibly well. #BurgerBinge

Awesome, juiciest, tasty burgers! You'll need plenty of napkins and take the leaning forward, legs apart stance for the first bite to avoid a messy clothing situation. Good prices too.

Had the veggie option at a wedding this weekend. Honestly, this was the best veggie burger I have tasted up until now. And the chips that came with it were delicious. Bravo lads!

Amazing burgers every Saturday at the food market in New cross, a little pricey though considering it is a market burger and there is no seating area.
