A great mix of sharers and pizzas with friendly staff! A pair of us ordered a few of the sharers - one of the arancini balls, the bruschetta, the fries - and one of the Americana pizzas and split the lot. The food was fab - the arancini especially! The pizza as well was incredibly fresh and was delicious and the dough bites with garlic dip was delicious. We'll be back!

Absolutely incredible pizzas, the dough and sauce is otherworldly. We had the starter garlic balsamic bread and it was simply divine; soft, delicious, melt in your mouth. Check backs could have been quicker but we understand how busy it gets !! Couldn’t recommend enough, we will be returning asap whenever we’re in Hertford! Fantastic prices for the amazing quality xx will be spreading the word

Good flavour, texture and price of pizza bread. Maybe we should have been a little more adventurous with the starter as the garlic bread was exactly same style as the pizza main but overall very nice meal out. Reasonable prices and friendly service. Wait times were ample especially considering it was a Saturday evening.

By far the greatest most authentic pizza in all of the UK (I dare say!). The taste is exquisite, the dough is so light and fluffy, and the staff and atmosphere are super friendly and relaxed. This is now our weekly regular because we simply crave this pizza and you will too!

Come here for lunch. The service was very good. The pizza choice was great. I initially sent my first one back as it wasn't quite cooked. But was sent a replacement within a few minutes which was perfect! The lady who was down helping from Sheffield gave great customer service. I would definitely recommend and will be returning.

Finally tried out Hertford's newest pizza place. Proove they do brunch and dinner menus. Extensive drinks menu. We opted for brunch menu. One had Italian breakfast Brussetta with pancetta, Italian pancakes with maple syurp and pancetta and I had Verde Calzone. Because it was gluten free it took the longest which wasn't an issue as it was tricky to cook. It was well worth the wait. Staff lovely food good and atmosphere brilliant. Will be back

I can not speak highly enough of this restaurant. I have been a few times now for both quick lunches, and for evening meals. The pizzas are amazing, with thin soft bases and great flavour, and the salads in the lunch deal are great too. We also have the difficult time eating out with our kids due to one having severe food allergies & anaphylaxis. It's incredibly rare that he eats out as we always take him packed lunches to be safe. However, the servers at Proove were so attentive and helpful in making sure we were aware of everything that goes in to their food. It gave us complete reassurance. They have the benefit of everything being made fresh, so they know everything about each ingredient, and were happy to show us. Both food and service combined, we can fault the place.

It would be wrong of me to give this establishment any less than 5 stars. After reading the reviews on different websites, I was intrigued as to the quality and authenticity of the food. I can delightfully say that from today's experience of eating, it has surpassed expectations - even that being an understatement. I had ordered a Margarita Pizza as well as the Garlic Bread. Margarita Pizza: Flavourful - you could easily tell the quality of the ingredients used by the taste; the base sauce was full of taste and perfect for the assumingly neopolitan style the place sets out to achieve, the cheese was, if memory serves, a fully cow milk mozzarella which gave it a better texture and more consistent flavour than your standard mozzarella which would be comprised of buffalo milk as well as cow milk. Authentic - like aforementioned, this is one of the closest (if not the closest) style of pizza to what one could expect in the home country. People may assume by the thicker crusts of the pizza that it would be doughy and chewy, but no, it was light and full of flavour. I believe in Italy they often fold the pizza before eating as oppose to the standard slices you receive. It could certainly be done with the beautiful consistency of the dough. As for the Garlic Bread, although it's not a main, was equally as good as the Margarita Pizza. There was simply no fault to be mentioned. Outstanding. Will be ordering again, and I hope this review assists in the reputation and growth of this business.

Best pizza outside of Italy we have ever had!! If you're looking for an authentic pizza experience, I definitely recommend here. I had the gluten and dairy free pizza and it was incredible!! Service was fantastic as well - I ordered a brownie and without having to remind the waiter, he made sure it was gluten and dairy free. Great place.
