We had both the 6-course tasting menu and wine blending. Brilliant! The staff is useful and knowledgeable however totally ailing in self-importance. This eatery was a delight to be in and the nourishment essentially uncommon. I have eaten in the majority of Edinburgh's best eateries (not really those appeared as 'top' on TripAdvisor) and Aizle is up there with the simple best, in actuality ....... it beats a portion of the big name gourmet expert possessed foundations in my view.

This was my first time in Edinburgh and my friend and I were searching for a place to eat and saw the reviews on Online. Aizle more than lives up to its reputation! The flavors were incredible. Each course was beautifully prepared and we also splurged and went with the drink pairings. Drink pairings can be a hit or miss but in this instance it was perfectly done. My favorite dish of the night was the pasta course with mushrooms and ricotta. Just melted in your mouth.

The staff were very efficient and friendly. They were also super responsive when I sent an email query prior to our dinner. We also liked the fact the venue wasn’t too big.

All in all an amazing evening and I would highly recommend. I would certainly go again on any return visit to Edinburgh.

aizle (n) [Scots.] a burning coal; a glowing hot ember; a spark.  As they reliably inform you it also “rhymes with hazel”.  All I know is that when I first set eyes on their website, I instantly knew that a visit to this restaurant was a necessity; primarily because of this caveat: “Please note we at Aizle have no choice of menu or ingredients.”

Aizle has been on my Edinburgh to-do-list for ages, thankfully my birthday came along and bumped it right up to the top. I’d heard numerous glowing reports and some confusing explanations of how the menu works, basically there is no menu. Instead, a list of seasonal ingredients fill blackboards around the restaurant, you let the waiting staff know if there’s anything you can’t/won’t eat, otherwise just sit back and enjoy the ride.

The style of the restaurant suits my tastes perfectly.  No menu, so no heartache (I’m not the most decisive). It was a delight not to have to choose what to eat, but instead be served beautifully presented plates of food using fresh local ingredients in novel and imaginative ways.

Edinburgh is home to some the finest restaurants in the UK. I am constantly amazed by the quality of the food served here and the calibre of the chefs. This also means that after a point, you are not easily impressed. Aizle was highly recommended by a number of my foodie friends and so I'd already set the bar very high.Â

Not only has Aizle been on every foodie's lips since it opened about a year ago, but I have had the pleasure/pain of walking past it every day since then. .... we had a crudite with pickled vegetables and lemon mayonaisse, a pot of chawanmushi with iberico lardo and crispy fish skin, and a lobster doughnut. My. Word. What mouthfuls, what delightful bites!

Cream of the Crop?
As is the norm we begin with bread, not just any bread however. Seaweed brioche and a beautifully thick and salty butter. I’m already salivating and the first course hasn’t even arrived. The official start of the evening is a small assortment of canapés. A take on an infamous gourmet dining dish with the aforementioned quails egg, poached and sat atop a pea and cauliflower ragout served in shell and topped with sour cream. It’s rich and creamy and fresh simultaneously. A real pleasure.

Aizle is hidden away a little on St Leonard’s Street. That didn’t stop it from doing a bustling trade on a Friday night. Aizle’s unique selling point is that it creates its set tasting menu from a monthly ‘harvest’ using seasonal produce.  Whilst we were we waiting for our first course we were served some seaweed bread with some butter and what I think I was told was labneh, which is a yoghurt cheese spread type thing. This was all very nice.

After this we had our first course, which was called a ‘snack’. This was perhaps the most playfully plated dish of the evening. Firstly, there was a spring ragout and quail egg mixture topped with a lemon sabayon, all placed into an egg shell. The sabayon on top was just divine and the ragout was punchy and fresh. The two other snacks on the plate were a type of cracker with scallop roe and a piece of fried chicken with kimchi. The flavour was delicious and the toppings seemed to melt in the mouth. The chicken was very tasty. The kimchi added a layer that was surprisingly good.

The next course was watermelon tartare. This was my favourite course of the evening. The amount of flavour the watermelon had was startling. The oil and the sprinkling of feta gave the dish a nice savoury note.

The next course was skate with mussels and capers. The portion of fish was generous and set beautifully on the plate. The fish was moist and flaked gently. The fish was complemented by the mussels, which were juicy, and the zingy strength of the capers.

Then we had sous vide chicken with onions, mushrooms and a sweet potato puree. I have to say that I was a little disappointed with the chicken as I was expecting it to be a little more moist, particularly as it was sous vide. It didn’t take away from the flavour though, which was good. The sweet potato was silky smooth though, with not a lump in sight. The mustard seeds brought some extra depth which brought the dish together. The onions has been meticulously peeled to make them look like petals on the plate, which was a lovely visual effect.

We decided not to go for the optional cheese course as we did not want to struggle with dessert. The dessert was an assortment of all things strawberry, with some accompanying caramelised white chocolate coated in a strawberry jelly. You could smell the strawberry emanating from the plate.

The meal was thoroughly enjoyable and it was fun not knowing what dishes you were going to get, apart from the list of ingredients up on the blackboard (unless you look at the menu in the window!). The staff were knowledgeable, friendly and not intrusive. I will be keeping an eye on the ingredients on each month’s harvest as I am sure I will be back for another visit….and another.

Not only has Aizle been on every foodie's lips since it opened about a year ago, but I have had the pleasure/pain of walking past it every day since then. You see, I live around the corner from these hallowed halls and delightful as it was to walk past the inky interior, ablaze with tiny flickers of candleglow, I always had a bit of a why not me? moment.

Enter s.o.. Valentines Day is a much derided tradition, but for reasons that I won't go into now, I love it. This year, I had a special dinner planned for me. A secret dinner that I was not to know about until the evening arrived. (We actually went the Thursday previously but I'm not complaining). I had my suspicions, and was delighted when they were found to be true.

We sat down. I looked at s.o. nervously. The moment had arrived.

We decided not to go for the paired drinks menu as we both had work the next day, then promptly set about three glasses of prosecco each. We waited with trepidation for our first course of three hors d'oeuvres to arrive. They were brought to us with a flourish, and after each dish was set before us the contents were explained in minute detail. Here, we had a crudite with pickled vegetables and lemon mayonnaise, a pot of chawanmushi with iberico lardo and crispy fish skin, and a lobster doughnut. My. Word. What mouthfuls, what delightful bites! S.O. and I could hardly believe it - move over every other restaurant we have ever been to. We will be spending our life savings here.

Needless to say, the first course hit the spot. We were hooked. The starter was next, a selection of beetroot with smoked salmon and grimbister cheese crumbled lovingly over the top. This was good. I liked it. I ate it. But I ate the salmon separately - I tried it all together but I just didn't geddit.

Next course, fish. For this we had, what I assume was looking at their February harvest list, dayboat fish with sea purslane and other sea goodness. This fish was on par with the other best cooked piece of fish I have ever eaten, at The Vobster Inn, a specialist fish restaurant in Somerset before it changed hands. Yum, although I could have done with a bit more salt please.

Then on to the meat course, which was one that we were most looking forward to. 60 day aged beef, with roasted parsnips and crispy parsnips and parsnip mash/dip, cherry mustard, and oh! It was good. Not the most tender beef we've ever had, if we're being picky. But the flavour was just yum - although again I would have preferred a smidgen more salt on the beef. I have an addiction that must be enabled.

Finally, the dessert came out. Different takes on rhubarb with yoghurt ice cream made a pretty picture. It is only the worst of shames that neither s.o. nor myself is that partial to rhubarb. So fine and cooling, a nice palate cleanser but no more.

All in all, we were mighty pleased with this gem. There were highs, those three bites to start, and lower highs, rhubarbgate, but over all we left sated. It's regularly booked out, so if you do want to sample some delights ensure to book in advance. During the fringe, they trialed a lunch opening which I sadly missed due to other commitments - but next time lobster rolls are on offer, I will be first in line!

Just stop. Drop whatever you’re doing and book your dinner at Edinburgh’s new dining experience, Aizle. It’s a charming place, with a well thought-out concept, staffed by talented people who are creating and serving fantastically fresh, deliciously dynamic food. You won’t be sorry. (Unless, of course, words like “experience” and “concept” in relation to food set alarm bells ringing for you…)

What’s so awesome about Aizle then? Firstly, there’s no menu per se. Instead, great food just turns up in front of you. The only dinner-y clue is a blackboard which lists tonight’s ingredients: pumpkin, ras el hanout, truffle, crab, mussels, chickweed, skate, sea aster, parsley root, Clash Farm pork, apple, honeycomb and gnudi. We had no idea what order these items would be served in, which would appear together or, for that matter, what some of them even were.

I’m excited. As someone who will try anything (including, once, fermented yak’s milk), I have every confidence that the chef will make the best decisions for my taste buds. He knows his ingredients better than anyone. And tonight, those ingredients are on that board because they’re the best of what’s available seasonally and locally. It’s a dream.

Die-hard menu fans need not despair – there is a drinks menu. And it looked great. But by now we were beyond menus, so we opted for the matched drinks. By the same principle of the chef’s knowledge being in my plate’s best interest, the bar staff should know which wines will best suit my glass. And as Aizle is run jointly by a chef and a mixologist, what better way could there be to appreciate both arts.

Our starter was a feast in three parts. There were a pair of rice crackers with cucumber gel, crab, chilli and chickweed (a leafy plant that grows in the wild); it was all light and delicate.

Then there was a couple of hearty pieces of intensely cheesy Parmesan shortbread, with shaved truffle and honeycomb, which thundered across your tastebuds.

Lastly there was a small glass jar of velvety pumpkin soup, containing a few soft pumpkin chunks and topped with a milk froth, delicately spiced with ras el hanout. (Ras el hanout roughly translates as ‘the best in the shop’ and is a lovely mixture of fresh Middle Eastern spices.)

The dish was accompanied by Barney’s red rye beer. Not one of my favourites – I find it a bit underwhelming – but a good local choice, perfectly satisfactory for the dish we were served. My appetite? Consider it well and truly whet.

To follow we had gnudi – like gnocci but made with ricotta. We can all agree that replacing a carb with cheese is genius. But just in case those little balls of soft ricotta weren’t enough, they came with a Parmesan foam. Excellent. The accompanying scorched baby leeks were charred to bitter perfection, providing a good flavour and texture contrast. A sea-salty balance was achieved with a scattering of mussels. To wash it all down we had a delightfully bright, mildly sour Chilean Chardonnay.

Next up was a plate of skate, which none of us had tasted before. It had a lightly fishy flavour and its dense, white-ribs, which easily flaked into strips, had a very meaty texture. Saltiness was delivered by caper berries, a sweeter, grainier version of the caper, and samphire-like sea aster. Parsnips gave the dish a sweet earthiness and with it we enjoyed a glass of Catarratto, an Italian white wine made from a Sicilian grape.

Our main consisted of pork cheek with a side of pork terrine, topped with scratchings. The richness of the meat was offset with a combination of radishes. Some were fresh and some were pickled in the form of choucroute, similar to sauerkraut. A bitterness was provided by an unexpectedly complementary burnt apple sauce and a Chilean Carmenere,easily the best red wine I’ve ever tasted – its depth and body gave it a real wow factor.

Pudding consisted of caramel ‘fluff’ (it was more like a texture with a caramel flavour than your typical foodstuff), a streusel (a type of walnut/cashew crumble) and tubes of pastry cream (like a more solid, less sweet creme patisserie). Around the plate were tiny, delicate, pink apple blossoms and a sweet apple gel, as well as a stand-out apple and celery ice cream. An interesting combination; the semi-savoury flavour and simplicity of the celery really cut through the apple.

I felt the dessert was rather large, given everything else we’d eaten but that didn’t mean that any of it went to waste. Nor did it prevent each of us from enjoying an accompanying beverage: one pretty apple cocktail, one charming whisky cocktail in a miniature carafe and one very pleasant, well-balanced sweet dessert wine, Domaine des Baumard.

We put this thing to bed with coffee. For a fixed price of £3 each we got several small cups of beautiful floral Chemex coffee, so good that no milk was required (which is very unlike us). The only letdown was the answer to what kind of coffee beans were used: ‘Italian.’ Given the expansive knowledge of the other ingredients, I had expected a slightly more in-depth response.

The meal is a fixed price of £35 and for that we had five courses. Bargain! Each course offered a decent portion size without leaving you wanting more. Our matched drinks were a further £25, for which we got a beer to start, three outstanding wines and a cocktail or dessert wine to finish. Currently Aizle only opens for dinner, which seems reasonable. How could you appreciate all that skill in a quick lunchtime sitting?

It’s fair to say we certainly didn’t regret our lack of choice – in fact, we fully embraced it. And we were richly rewarded. Every morsel that passed our lips was a considered combination of flavour and texture. If you don’t like the concept, fair enough, but in terms of creativity, quality and presentation, Aizle sets a high standard for dining out.

Aizle has no menu, just a list of ingredients that may or may not show up in your food, plus a chance to explain your dietary restrictions. The meal consists of five creative courses inspired by seasonal, local produce.

Aizle is getting 5 stars from me because every single course delivered. Each dish brought interesting flavors to my tongue - there were no duds, no fillers. Just tastiness. The second course involved perhaps the yummiest carrots I have ever eaten.

I opted for the drinks pairing, which included a beer, three wines, and a cocktail (all small servings). The beverages complemented the food well. The cocktail (a strawberry concoction, the type of thing I would usually avoid) was particularly delicious. I'm looking forward to trying some more of their house cocktails on our next visit, which will be very soon.

We had the most incredible meal here the other evening, safe to say some of the best food ive ever had. My friend was gluten free and the changes made were nearly unrecognisable, she enjoyed the same quality meal as I did. The highlights for us were the duck, monkfish and all the desserts! I would also say the cheese course is a must add! The wine pairings were beautifully done and explained, they complimented the food perfectly. Thank you so much to the lovely team for such a wonderful meal!

A relaxed place with great food and knowledgeable staff. Definitely on par with some one Michelin star places I tried so it baffles me why they haven't got one yet. The tasting menu has a story to tell from amuse bouche to dessert and the concept is consistent throughout the dishes, the decoration and the whole atmosphere of the restaurant. Highly recommended!

Beyond brilliant! Haven’t had a set meal of this caliber in quite a while. Service was flawless and the setting was beautiful. Alcohol pairing generous and plates were a work of art each one. Was dining solo and I felt like everyone was a friend. Do not miss this spot!

Best meal in Scotland. The taste is by far the best. Had more expensive meal in Scotland but not better than this. Some drinks in the soft drink pairing tend to be a bit too sweet. The wine pairing is really nice and complements the dishes well. Good presentation as expected in fine dining. Service also on par. But it's the taste of the food that really put this place on top. Use of the ingredient mix is very well done. Love the lamb belly and shoulders. If there's one fine dining to go to in Scotland, this is it for me.

Interesting tasting menu that definitely doesn’t leave you hungry - desserts were a highlight and the wine pairings perfectly complemented the dishes. If I was to nitpick, I would have preferred softer lighting to make it feel like a more relaxed space. Overall, a lovely dinner.

Fantastic experience. I came here with my fiance and we had such a great time. My phone died a couple course's in so there are a few photos short. We were taken too our table, our jackets were hung up for us and sat down with some water. The menu came out on recycled paper which was nice to see. Instead of a list of meals, they provide you with a list of ingredients which I loved. My fiance and I both had the tasting menu with matching wines. The food was amazing and the wines were paired perfectly. The vibe inside was relaxed/formal. The price and food was very much fine dining however the decor and music choice was far more casual. All in all we had a great meal, and thought the price reflected the quality. Would return again for sure.

Went there with a mate to introduce him to a set menu experience and it left him with a full appreciation for fine dining. Despite him hating the idea going into it. I have always enjoyed eating at highly rated restaurants myself and Aizle was substantially better than most. I've lost respect for Michelin because this restaurant hasn't received a star yet. The food was top notch. The service and care by both the the kitchen and wait staff was incredible. Easily one of my top 5 dining experiences ever. I don't even leave reviews. This place was that good.

Was interesting experience. Presentation of all served food was nice and taste in general was fine only except a few dishes. I can only give four stars bcz of service. I said to a server that i cant eat beetroof but in the end they served beet.

Absolutely amazing experience, brilliant manager with front of house staff that have been trained to perfection. We had the tasting menu with each dish described to us by the waitress & waiters. Each dish had delicious flavours, we were even lucky enough to have been to Noto earlier (a sister restaurant) to compare the dishes of both places. I have to say that although some ingredients overlap the flavours are different and are cooked differently. Highly recommended this place for a fine dining experience, and tasting menu is a must! Didn't get to thank the manager before we left, but thank you for your hospitality, an experience to remember.

Aizle is a very nice restaurant and is a lovely location to spend an evening in. I always enjoy tasting menus and theirs looks and tastes great. All of the dishes are really nicely presented, the bite sized moresels are packed full of flavour and the staff are really good at describing the dishes and wine pairings. It's also worth mentioning that the staff are all extremely attentive, very friendly and leave you feeling well looked after. Although a couple aren't great at pouring a glass of wine. The only real drawback for me was the small amount of wine that you get, less than you would expect in most restaurants and for the price of the night I'm sure they could stretch to fill your glass a little bit more to a normal level.

We were in town to celebrate a friends birthday and sort of fell into Aizle as it was attached (physically) to the Kimpton Hotel. What a happy accident! We had 10 people partake of the tasting menu with about half also partake of the wine pairing option. Every course was a beautiful and delicious experience. Best dining experience of this type that I have had in at least a decade. Staff and service was impeccable even in the face of 10 person table. I can’t say enough good things about Aizle. Made a special occasion truly memorable. Thank you!
