I have visited this place very often and it rarely fails to delight. In fact today was exceptionally good even though I chose the fixed price Sunday roast menu which is such fantastic value. The bass was generously portioned alongside the prawns and accompanied by a delightful caper dressing.

Lobster was the best lobster I ever had. Steak was delicious. As starter we had squid and scallop dishes, They were tasty. Service was so lovely and friendly. Cocktails are so good.

We stay at The Grand but have never ventured into The Cyan before as we are vegans, but I thought after travelling to Brighton let's book inhouse for a change. Well I was very pleasantly surprised, we let the lovely staff know we were vegan and they made it very easy to order, we were served by the lovely young Harry and Tai, absolute credits to The Cyan and the over all Grand experience. The barman made us beautiful mocktails and really listened to what we like. The decor is absolutely beautiful, the restaurant is spotlessly clean, as were all the staff. The food was cooked to order and it was tasty and fresh, extremely well presented with care and was excellent considering this isnt a vegan restaurant. I was very impressed. When we are back in The Grand in November I shall definitely book our first night in The Cyan again. As a vegan I highly recommend.

We went for lunch! Had the set meal! Was really good! Had pork belly for starters, it was so soft and just enough spice where you can taste the meat and the meat, loved it! And had linguini and fish for main, fish was alright but the linguini was really good! One problem i had was food did not have much salt so we had to add it afterwards but that’s fine! And the desert was meh! The service is friendly and good service but a bit slow

We booked a table for 11 for lunch today celebrating a 90th birthday, we all enjoyed a lovely Sunday roast, beautifully presented with a generous selection of tasty vegetables, roast potatoes and cauliflower cheese. Dessert was delicious. Attentive, friendly and extremely efficient service, great ambiance, excellent value for money. Highly recommended.

Beautiful old hotel with a modern twist. Lovely restaurant. Food was fantastic all well cooked with wonderful flavours. Staff the right amount of attentiveness friendly. Thanks to Sarah for being our photographer for the evening. Very enjoyable, would defygo again.

Beautiful setting, really good service and portion size was perfect the Yorkshire pudding on the Sunday lunch was incredible and its a steal at £22 for roast dinner main with 5 options and a desert including cheese platter for savoury taste buds. Already posted on group chats to come back and recommend friends. See you soon Cyan @ The Grand.

A tricky one, the food and staff are excellent, but the food, though very tasty and good, was cool, not hot and I found metal in my dinner! But it was still amazing! They gave me a free glass of wine, though I feel they should've given the meal for free too, ( cold and metal!) But they were very nice, and I have been a few times and I still di recommend it. Strange ! But true!

Lovely experience at the Cyan. We're life long vegetarians so last year we skipped it as the menu wasn't that great for us. This year was faultless. Food was amazing! Great size portions too. We had tempura vegetables, and asparagus with melted cheese for startes. I had aubergine with feta and tomatoes and my wife had the risotto for mains. Honey cake with the sorbet was sublime and the mocktails are so nice. Highly recommend, even for vegetarians. Staff went above beyond, especially Harry and Tay. We'll be back next year!

Our visit was a mixture. My wife ordered a whisky and coke specifying no ice. I asked for some tap water on the table. The whisky and coke was bought with ice and so my wife asked for another without ice. She thought it tasted funny, assuming it was the added lime, for which she had no objections, but it transpired on the bill that she had been given a JD and coke. Bourbon, not whisky. When the waiter bought the water he kindly went to pour it into a glass. Unfortunately his mind was so distracted that it splashed quite a bit on the table too, and he left without realising. Easy for us to mop it up, but not what you'd expect at the Grand. When the roasts arrived, my wife's pork belly was entirely fat with no meat. These are the negatives. The positives are that the roast was replaced quickly and both my wife and I found our meals to be delicious, and happy that there was a generous amount of vegetables. The puddings were exquisite, the sticky toffee pudding probably the best I have ever had. The service from all staff bar the one waiter spilling the water was lovely, especially the waitress that smiled continually and checked in on us. So how was our visit to The Grand Cyan Restaurant. Very good, but areas that could be improved on.

We had lunch for two from there set menu, for starters we had mackerel pate with toast my Wife liked the pate but far too much pate for the amount of toast, I had the sticky glazed pork belly with kimchi and Korean spice nice but very fatty. For mains my Wife had the chicken and I had the cod both very good. Dessert we both had pecan pie nice but pastry slightly too hard and thick. The staff were very nice and polite.

I attended Cyan with my family and had the bruschetta to start which was delicious. For my main I had the prawn linguine which is usually a favourite dish of mine wherever I order it ! However there seemed to be no sauce at all included in the dish, I suppose opting for a simple butter sauce. This left me a little disappointed as the pasta then seemed quite flavourless. Nevertheless the prawns were delicious and the portion was a great size.

My Sunday lunch group visited this restaurant for lunch on the 13th of November for a members birthday dinner and I have to say it was generally a good experience. The portions are large (I had the slow cooked pork belly) and the vegetables served separately were generous portions (especially the roast potatoes) if not enough green veggies! The service was a little hit and miss and the 12.5% service charge is too much frankly for the level of service. It was a little noisy as it was busy but a shrieking baby at a table quite far a way was most unpleasant and the staff could have handled that better as it went on for ages (like take the child out for a while)- the parents were oblivious to the sound and it was not the right venue for a baby to be brought into IMHO. Top tip the coffee is not good and at 5 pounds overpriced!

I visited this restaurant for lunch on a Friday by myself. I ordered the scallops with split pea puree followed by lemon sole and house salad from the Friday lunch menu. I ordered the wine pairing. I was very surprised when told that the wine pairing was not available! How can you design a very small menu and offer wine pairings and then run out? Perplexing. Anyway, the pea puree with the scallops was indistinguishable from mashed potato. Perhaps I read the menu incorrectly. The lemon sole was delicious and buttery and had plenty of prawns with it. The salad contained enormous chunks of sun-dried tomatoes and lacked finesse. Sun-dried tomatoes should be used sparingly and cut up smaller in my opinion. The petit chablis that replaced the wine pairing was very good. The crowning glory for the entire meal, though, was the 3 hand-made chocolates with coffee. Quite superb.
