Love this place. Tucked away on a quiet street in the North Laine, Silo exudes an air of creativity and excellence. It’s quaint but the high ceilings open up the floor. Two bars, one featuring an open kitchen, the other a bar where drinks are prepared; I sat at the latter is the host created a makeshift spot for me since I didn’t have a res.
Their logo is based on their bread maker which they use daily to bake their sourdough (it is fresh, served with salted butter, and it is delicious). I came and tried their Omni Octoberbest tasting menu. The portions are small but creative and totally satisfying.
The first was a pumpkin salad with black pudding. Never had black pudding prepared this way but it was an excellent combo. The second, potatoes with sea kale and nuts...kale had a nice bite to it and complemented the potatoes brilliantly. The main, ox heart with kale and some kind of berry. You’d expect a lean muscle to be chewy and tough. Not here. Tender and cooked to absolute perfection. For dessert, a pumpkin seed ice cream with fig reduction and topped with furukake. Odd for sure. Ice cream was smooth and tasty but the toppings were a touch too salty. If they reduced the amount of the seasoning by half, it would’ve been great.
Coming in without a res, I wasn’t sure I’d get a spot but they were super accommodating and created a seat for me at the bar. Despite the makeshift spot, I wasn’t once neglected and struck up cool convos with the bartenders. The head chef brought me a slice of bread then went back to directing the kitchen.
Should be noted that I came for Octoberbest so prices (£20) and menu will be different. Still, give this place a shot.
Such an incredible dining experience. Food was the best I have had in years, service impeccable and excellent value for money. The pumpkin seed ice cream, fig leaf dish was the best dessert I’ve ever eaten!
Love the ethos and mission statement of this restaurant, tasty, different, well thought out dishes, great staff, and toilets with chalk for graffitiing. What more could one want?! check it!
( One criticism? They could up their game with their wine pour measures, they've gone all Sydney on us Brits)

One of those places that is different to everywhere else and suggests a fresh change in direction for modern cafes. This time a commitment to using local resources in season and making super tasty food with them ie: beautiful leek treacle made from leeks cooked and reduced over a long period - magnificent and not at all expensive or pretentious.
What an amazing experience. Every single dish was mindblowing. We had one of the most memorable desert ever. Very friendly and attentive service.
Wonderfully helpful and knowledgeable staff, loads of different flavours and an extensive wine list. Something different from a run of the mill restaurant. Well worth a night out. Thank you.
As an Australian, I pride myself on having a very keen sense of what a good cafe is. And Silo has it all and more!
My expectations of any good cafe were already met because of the great tea & coffee, minimal decor, beautiful crockery, perfect background music and, of course, delicious and interesting food! But, the cherry on top, was the fact that they make so much of their food in house, have a compost/waste free mentality and had amazing vegan/vegetarian options.
Must trys are: the vegan sunflower seed ice cream and almond milk served with tea (I drank some of mine straight out of the adorable bottle!)

Excellent food and totally affordable. Perfect for a nice date night. The menu is interesting and the food is full of wonderful flavours. Everything is locally sourced as well.

I was given a voucher to eat here as a birthday present and although we were a bit skeptical what the food would be like as we aren't into fancy meals it was absolutely delicious. We were so pleasantly surprised and will definitely be back. The chef explained all of the dishes and where the ingredients came from which was amazing and they adapted the menu to be vegan for us. Some of the most delicious food I've ever tasted - so pleased that we came here was absolutely amazing.
SUPER PLACE, SUPER FOOD AND SUPER TEAM! I have had the pleasure of eating at Silo three times for luncheon and it has been nothing short of excellence par.... However, last night's menu with some dear friends from London, was simply mind blowing!!! Team, you really made the menu jump out at every course (five course taster). Your skills of combining simple and local ingredients, deserves Michelin Star for sure. The presentation, the taste, the flavours, all beautifully prepared with deep attention to detail. Yes, I will be back very soon for meal and I hope you can post a loaf of your sourdough rye bread weekly. Knowledgeable team is such a treat and they all made sure they were wearing smile..... A feel good place in every way! Oh yes, Vegans, you are fully catered for with your friends who love their meat, just the place where all can enjoy a great meal.
Had an awesome dinner here with another couple. Booking was easy. I love the laid back style. They have a sustainable food ethos and don't waste a thing. I loved the concept of drinks brewed on site. Staff all knowledgeable and chefs explained everything about the food which was all fantastic. Will be back for sure.
Unique, ethical, environmentally important and phenomenal modern takes on British food. Not to be missed and incredibly brightonian.
Outstanding. Possibly the best restaurant I’ve been to in Brighton and it compares very favourably to some of the best restaurants I’ve been to full stop. During the day they serve a very good brunch and the coffee is better than most places but you need to go in the evening to see this place really shine.
The dinner menu is fairly limited but each dish is unique and the flavours are fantastic. The staff are very good and the ambience is really nice too. They also have a beautiful wooden machine for grinding flour that they use to make delicious bread every day.
Very pretentious, but they back up everything they say with excellent food and clearly a great approach to sustainable zero waste.
Enjoy the ride and listen to the waiters and chefs they talk you through the options and help guide you through the choices.
Can still taste some of the dishes now.
