I can not explain how impressed me and my partner were of this place. This place exceeded all expectations, and our expectations were high after being recommended to go here by so many people. The food was to die for.. i love cheese and meat boards and honestly these were the best cheese and meat boards we have ever had. The cocktails were amazing and flavoursome. My partner tried some beers he had never had before as these were sources from Italy and Sardinia.. which he loved all of them. And the dessert.. the white chocolate and pistachio cake is the best cake i have ever had and i am a huge desert person.
It is a dream for anyone gluten free, i will be taking my mum who is Coeliac here shortly.
Francesca served us all evening and she was the best waitress we have ever had. You could tell she loved the food and drink herself, she was able to recommend and advice portion sizes. She named and described all the cheese and meats so we knew exactly what we were eating and all the staff were friendly, welcoming and smiley.
I loved to see how many dogs were in here aswell, completely dog friendly. My two can come with me next time and there will certainly be a next time and shortly.

Visited for the first time today (for lunch). Had the homebaked Focaccia sandwich which was outstanding in both taste and presentation. A great wine and food spot!
Such a lovely evening with fabulous food and perfect wine. Our amazing server Taty let us try various wines before settling on a bottle. She helped us with our food choices and was so attentive, such an enjoyable evening.
I visit Paisá often and the team are always very polite and welcoming. The food is delicious (particularly the seafood sharer and the customisable foccacie!) and the cocktails are also well made with good quality ingredients. Would thoroughly recommend and easily my favourite bar and eating venue in Stortford!
New opening and perfect for date night! The owners are young and very welcoming. Food is mouth watering! Can’t wait to be back to try new things on the menu, together with a glass of wine. Top bonus: there’s outside seating which is perfect with this weather 😍 totally recommend!!!!
Just... wow. Such a wonderful experience from start to finish. Friendly and helpful staff, who were very accommodating towards our 1-year-old. Efficient service (but not rushed), and the food was to die for. Without a doubt the best focaccia I've had outside of Italy, and beautifully seasoned chips with garlic aioli. And at the bargain price of £10 + drink at lunch time. I can't wait to come back to sample more of the menu. It was perfection.

A really nice Wine Bar and with the guys who work there that they are really friendly and professional, they welcomed me with a big smile.
Really tasty food especially the CUOPPO boards and cocktails are perfects
I suggest to try the basil one.

We had food delivered to a work event. Food was delicious and fresh and the staff came to site to set up the food to a really nice presentation. We would definitely book again as food and service was excellent!
